Fish and Rice Pastry Triangles




FISH AND RICE PASTRY TRIANGLES - a quick and nutritious meal
Notes: 15 minute preperation - Serves 4 - High source of Omega 3
INGREDIENTS:

1 cup of cooked brown rice
20gm tin herring fillets in tomato sauce - undrained
½ cup frozen peas
2 spring (green) onions finely chopped
2 teaspoons of lemon juice
1 egg beaten
2 sheets of prepared puff pastry
 METHOD:
Combine all ingredients with ½ the beaten egg
Cut each puff pastry sheet into two triangles
Spoon on mixture and brush edges with remaining egg and fold over to close
On a baking tray lined with baking paper place the folded triangles and brush the surface with remaining egg
Bake in an oven at 200C (Gas Mark 6- 400F ) for 25 minutes or until golden brown and puffed up.

You can use 2 1/2 minute microwaveable brown rice. I like to use a good brand of "herrings in"
