Parmesan Roasted Baby Potatoes



PARMESAN ROASTED BABY POTATOES

INGREDIENTS

Makes about 3 servings
250 g baby potatoes, scrubbed and cut in half
50 g butter
25 g Parmesan, grated
garlic powder
other seasonings (rosemary, thyme basil, oregano, etc), optional

DIRECTIONS

Preheat oven to 200 C. (400 F )
Melt butter and pour it into a baking sheet and spread evenly across the bottom. 
Sprinkle parmesan cheese and sprinkle other seasonings all over the butter.
Place halved baby potato halves face down on the butter and seasonings.
Place in preheated oven and bake for 30 to 35 minutes. Cool for 5 minutes before removing from pan. 
Serve on a wooden platter with quartered Roma tomatoes (sprinkle sea salt crystals over tomatoes.)

You can make a tossed salad of tomato wedges, mixed lettuce leaves, finely sliced white onion, mixed herbs and dressed with dash of good quality EV olive oil and a dash of balsamic vinegar (don't drown it) and sit that on the board in the centre surrounded by the potatoes - lovely with Barbecued Rib Roast!
